Barbeque Time!

Spring is right around the corner (well, it's here for me but not officially) and that means it's time to get out and barbeque!  There is nothing easier and it can really change up the way we approach dinner.  
 This simple and delicious rub was given to me by my friend Sue (who is such a great cook and entertainer!) and it has become a staple in my kitchen.  Rubs really kick up the flavour without all the goopiness of a sauce  and provide a nice crisp coating while helping to maintain the tenderness of your meat (very important!!)
Spice Rubbed Pork Tenderloin via Chatelaine


2 tblsp  of olive oil
1 tsp each of ground cumin, ground coriander and brown sugar
1/2 tsp each of garlic powder, salt and pepper
1/4 tsp of ground ginger
1 pork tenderloin
In a small bowl, stir oil with seasonings.  Pat meat dry with a paper towel and rub mixture evenly over your meat.  
Prepare your barbeque to a medium heat.  Once it has warmed, grill your tenderloin with the lid closed, turning occasionaly until the thickest part of your roast reaches an internal temperature of 155F.  This should take approximately 20-25 minutes.  Remove from grill and let stand 5 minutes, then slice.


From barbeque to table in under 30 minutes!!  What could be better?  Serve with a salad and some tzatziki et voila!
